Statement of Intent

Gluten-free dieting is very expensive and highly non-accommodated by the American economy, despite the high and growing number of people whose diseases or disabilities require adherence to it. One in 133 Americans are afflicted with celiac disease (Allen), although the majority has not yet been diagnosed. That is between 2.5 and 3 million Americans (Zhang) and that number still does not include those with other diseases that require adherence to the gluten-free diet. Due to a lack of education as well as the many and multifaceted symptoms of celiac disease that are also linked to other diseases, celiac disease has been very difficult to diagnose. When compared with other countries, the United States has a much slower response to symptoms. My end products will be a website, a model of the small intestine, and a brochure to inform doctors and patients.
